Grilled Salmon Nachos with Cilantro Lime Sour Cream

Easy to make and delicious to eat, this unique take on the traditional nacho is sure to be a hit. The lime cilantro sour cream and mango salsa perfectly complement the grilled salmon for an irresistible taste. Garnish with extra cilantro and lime wedges. This recipe is also gluten free.

 

What You Need

1 (179 g) package lemon herb grill salmon fillets

2 Tbsp jerk marinade, gluten free, optional

1 fresh mango, diced

2 Tbsp red onion, minced

2 tsp jalapeno, minced

1 tsp honey

Salt to taste

2 Tbsp fat free sour cream

1/2 tsp lime zest

1 tsp lime juice

1 tsp fresh cilantro, chopped

20 tortilla chips, gluten free, optional

Garnish: cilantro leaves and lime wedges

 

What to Do

If desired, spoon the jerk marinade over the uncooked salmon fillets. Cook the salmon fillets according to the package instructions.

Mix the mango, red onion, jalapeno, honey and a pinch of salt in a medium bowl. Set aside.

Mix the fat free sour cream, lime zest, lime juice, cilantro and a pinch of salt in a small bowl. Set aside.

Arrange the tortilla chips in a single layer on a platter. Top each chip with the mango mixture.

Cut the cooked salmon fillets into approximately 20 pieces and place one piece on top of each chip.

Top with the lime sour cream and garnish each chip with a cilantro leaf. Serve with lime wedges.
